kurobuta and white charcoal are the true essence of japanese food culture, kurobuta pork is frequently referred to as the "wagyu of pork" or; in certain instances the "Kobe beef of pork". all pork used is from our very own farm-raised foraging berkshire pigs. binchotan or white charcoal has been used for over 400 years in traditioned japanese cooking due to its unique characteristics.

all of the white charcoal we use is imported directly from japan.
